Easter and Mother’s Day and other Spring Holidays are right around the corner. It’s time to plan your Spring dinner or brunch.
The good news about Spring Holiday Side Dishes is that so many things can be healthy, gluten free, grain free and still satisfying.
You decide if you’re eating ham, rack of lamb, a prime rib or maybe this mock porchetta. No one says you can’t do a beautiful roast chicken.
I’ve put together Spinach Tiger’s Favorite Spring Holiday Side Dishes and Desserts.
Take note that I’ve marked them paleo, low carb or gluten free where appropriate. (For example, I’m not going to name an egg, gluten free).
Spicy Pimento Deviled Eggs (Low Carb) In the South, we always have pimento cheese and deviled eggs. When you put these together, you have a low carb, keto appetizer or holiday side dish.
As far as salads, you want salads you can make ahead that have a high acidic dressing.

Red Cabbage Salad (Low Carb, Paleo)
I know cauliflower isn’t exactly spring, but, this raw cauliflower is great for a big gathering because you make it ahead of time.

Cold Green Bean Salad (Paleo) I put pears with green beans. It worked. Switch out the pears for cooked red sliced potatoes as an option.
I’m going with beets are a year-round side dish.

Typically, I like kale best in Fall and Winter. This lemony dressing kale salad works for Spring and let me suggest adding cold peas.

This is the all around must have at every holiday dinner.

I brought this to a pot luck. It was one of the few dishes that completely disappeared.
Baked Corn Pudding – One of the most popular dishes of all time here.
Sheet Pan Frittata, Perfect as an appetizer, side or brunch item.

We had this at Christmas. It’s everything you want in a scalloped potato. It takes time, but worth it.

Chocolate Cupcakes, Gluten Free I got this recipe from America’s Test Kitchen. It’s really good. You could use swerve and make this sugar free, if there are special needs.
This has a rich frosting and I’ve made a zillion times, because it’s reliable as a winner. The recipe makes a lot of cupcakes, which is a great crowd pleaser.
Pavlova with Lime Curd (Grain Free, Gluten Free) These are easier than you think and you can fill with lime curd and any fresh fruit you have. You make them individually, and they are another elegant choice.

Coconut Cake – or Coconut Cupcakes The cupcake won an award. It’s that good and you can find out how to color coconut.
I can’t leave you here without sharing the biscuits. Biscuits are always a holiday choice, and I have good news. I have a biscuit for every diet choice.
