Thank you all for coming to Spinach Tiger in my tenth year. My heart is full, because you have stopped by for my big fat healthy recipes and or videos.
Google Analytics lets me know what YOUR favorite recipes were this year, but I want to tell you what what MY favorite recipes were. My favorites are a bit different than yours and you can find a list of your favorites at the very bottom of this post.
Here are the my favorite 2018 recipes in no particular order.
This was a sponsored post for Spectrum oil, and I used a spicy cayenne olive oil. Whether you spice it up or not, cabbage, vegetables, and Italian sausage make this a soup we couldn’t stop eating. I used a slow cooker for this recipe. I like this one because you can sauté in it also.
Grain Free Sweet Potato Biscuits
The decision to add a little bit of sweet potatoes to this popular keto biscuit was smart because it added a little heft, and made it the best biscuit to make Thanksgiving stuffing. While creating this, I discovered scooping with an ice cream scoop gave this gluten free, grain free biscuit height. A big win! Do make these often, and save for next season.
Spaghetti Squash Casserole with Mushrooms and Italian Sausage
This recipe was so good, we made it three times in two weeks. I have had friends make it and love it. It’s comfort food.
Festive Salad with Butternut Squash
Every year I make at least one salad that knocks me out. I was so proud of this salad because it’s not only tasty, and big fat healty, it’s beautiful.
I could write a book on what the pecan tassie means to me. It’s a childhood memory, was the first recipe I ever published and when I was able to make it with almond flour and have it be just as good, I was ecstatic.
Two of my favorite meals you can make with the sauce are these new keto friendly Italian staples.
Pork Panko Crusted Eggplant Parmesan
I was thrilled to be able to make real fried eggplant like my mom, thanks to Pork Panko.
Pork Panko Crusted Chicken Parmesan
Discovering Pork Panko has been such a find, as I can make several of my favorite Italian Dishes.
Substitute wherever you use panko break crumbs or almond flour for frying.
I have several bolognese recipes here, all authentic and long cooking. This is just one of my many bolognese versions. This peach version brightened up summer. I made my bolognese in my favorite Le Creuset Dutch Oven.
The sound of this lets you know right away how great this is. In winter use apples or grapes!
Inspired by a favorite restaurant in San Francisco, this was one of my favorite bites of the year. Very umami with capers, olives, salmon, chili pepper.
This is a killer recipe made with golden raisins, parsley, garlic, and almonds. I actually call it crack cauliflower. This is just as good as my favorite of 2017, the shaved raw cauliflower salad.
Greek Feta Meatballs with Pistachio Mint Pesto
I have a lot of meatball recipes. This is the most unique. The feta is inside each meatball and the pistachio mint pesto brings it home.
Apple Almond Tart (Keto Friendly)
This might be my most favorite dessert of all time. I made the original version at my five year anniversary, and eventually have made several versions. This Apple Almond Tart is made with an almond flour tart crust, heavy cream, maple extract, almonds and Swerve.
I cannot tell you just how delicious this is. You have to make it. It’s keto friendly, and will blow your mind if you’re following a low-carb plan.
The single most requested dessert from friends and family who are following a low carb diet and want luxury. You can make this with sugar if you’re not on low carb. Rich and wonderful. It was created when making these grain free biscuits created a bastion of egg yolks.
You will get recipes for my large cheesecake, a cheesecake for two, and individual crustless cheesecakes in jars, perfect for portion control.
You always come for biscuits, but I’m also happy you always come for my grandmother’s tomato sauce, in the top five every year since it’s been published.
Chicken Picatta Low Carb
This was made with almond flour, but could just as easily be made with the Pork Panko for a nut free version.
The Post I Worked the Hardest On
I made six orange olive oil cakes before I felt satisfied. I tried different methods, different ratios and got what I was looking for. This was inspired from a middle eastern restaurant. Dining out often gives me the inspiration I need to get excited.
The Most Viral Post of the Year
These grain free friendly maple cream cheese pecan bars rose to fame quickly. I have a video coming for this because it’s so popular. It’s made with an almond flour crust and swerve sweetener. This was the favorite on instagram also.
You may not realize that Spinach Tiger is 10 years old this month. There are over 1000 recipes, and this year we put out around 100 news ones. Spinach Tiger has taken a bit of a turn to cut out grains (most of the time) but has aimed to make sure these are super delicious recipes.
I will still be making modern comfort food because I’m not the only one that eats around here. I’m still true to myself and my vision to bring you real food, food that won’t easily put weight on, yet fills you up and makes you happy!
It’s been a great year sharing recipes with you. This blog has a way of taking its own twists and turns and feel more led than leading, so I’ll be just as excited as you to see where flavor, taste, texture and color present themselves.
