Ten Easy Healthy Chicken Dinners from Leftover Roast Chicken

A few days ago, even though I was super busy, I was able to roast a chicken because there is hardly any active cooking time. Easy doesn’t have to mean buying frozen dinners full of a long list of ingredients. Easy can mean delicious and affordable with these ten easy chicken dinners.

Prepare Your Roast Chicken

  • Buy an air-chilled chicken, if possible.
  • Plan on one to three days in Fridge, salted. Salt generously all over.
  • Gently separate the skin from the chicken breast to stuff herbs,
  • Stuff rosemary sprigs or tarragon under the skin.
  • Take chicken out at least one hour in advance.
  • Preheat oven to 450 degrees F, 225 C.
  • Heat cast iron pan for twenty minutes.
  • Roast chicken for one hour, until thickest part reaches 165 degrees F, 74 C.

What is the Best Temp to Roast Chicken?

You want a HOT oven: 450 degrees F., 225 C. Just make sure you are not roasting in glass. A large cast iron pan is the best vessel for roasting a chicken.

My mom and I argue about this because she was afraid to roast a chicken at such a high temperature.
