Shrimp loves corn. Sauté shrimp with a yellow onion and add in corn, some fresh thyme, olive oil and you have a meal. I don’t have a recipe for this.

  • Sauté a red pepper in olive oil for five minutes.
  • Add a garlic clove, half an onion, sliced yellow zucchini and soften.
  • Add in shrimp and sauté a few minutes until they turn pink.
  • Add corn, salt, pepper, fresh thyme. Done!

One of my favorite go to big fat healthy shrimp recipes involves vegetables. Zoodles or Spaghetti squash do it for me. I use zucchini for my zoodles because they are pretty. I add roasted tomatoes, olives, fresh garlic, fresh herbs. If you want more heft in the recipe, add in some white beans.
