A few days ago, even though I was super busy, I was able to roast a chicken because there is hardly any active cooking time. Easy doesn’t have to mean buying frozen dinners full of a long list of ingredients. Easy can mean delicious and affordable with these ten easy chicken dinners.
Start with a roast chicken, and my recipe is easy and foolproof!
One of my favorite things to make is this low-carb chicken pot pie. In fact, I had some leftover pot pie frozen, and it was yesterday’s lunch.
Low Carb Creamy Chicken Pot Pie
Use my grain free (low carb) recipe, this pastry crust, or for an easier meal, use store bought pie crust or puff pastry.
This is is super easy, using organic boxed broth, canned white beans, and chicken. You can also add a handful of kale or spinach to this.
You can use any kind of tortilla to make this easy dish. We used my grain free tortillas and jarred salsa verde. I like this one, Trader Joe’s Salsa Verde.
Chicken Stuffed Poblanos with Avocado Lime Sauce
This is real treat for shaking up the meal rotation. Chicken, almonds, dried fruit and more make the filling, and this is absolutely delicious.
You can switch out asparagus for broccoli, pistachios for almonds. Add rice or pasta if desired.

Making soup with left over chicken is super easy and satisfying.

Prepare Your Roast Chicken
- Buy an air-chilled chicken, if possible.
- Plan on one to three days in Fridge, salted. Salt generously all over.
- Gently separate the skin from the chicken breast to stuff herbs,
- Stuff rosemary sprigs or tarragon under the skin.
- Take chicken out at least one hour in advance.
- Preheat oven to 450 degrees F, 225 C.
- Heat cast iron pan for twenty minutes.
- Roast chicken for one hour, until thickest part reaches 165 degrees F, 74 C.
What is the Best Temp to Roast Chicken?
You want a HOT oven: 450 degrees F., 225 C. Just make sure you are not roasting in glass. A large cast iron pan is the best vessel for roasting a chicken.
My mom and I argue about this because she was afraid to roast a chicken at such a high temperature.
