Take notice of the white “Nashville” blanket I just picked up at my friend’s store Onyx & Alabaster. (not just a store, sophisticated interior designer). Both stores in historic downtown Franklin…The little town everyone loves to visit. Eat dinner at Gray’s (for delicious farm to table food). I recently ate there and was very surprised at how elevated the food was.

Instagram post 2180643253781899214_203001914 I grew up in Amish country in a fabulous and diverse mecca of classic comfort food.  Central Pennsylvania was heavily settled by the folks who were  and still are referred to as the Pennsylvania Dutch.

The word “dutch”  was a corruption of the word Deutsch or German.  They came either from Germany or the German speaking part of Switzerland and not from Holland. When they arrived in America they came with recipes for sausages, sauerkraut, noodles and dumplings.

Pennsylvania introduced  them to regional foods that they welcomed into their kitchens and put their own spin to. Tomatoes, pumpkins, squash and corn were heartily embraced and mastered by the Amish and the Mennonites.  As food cultures collided, a new generation of comfort food was born.. The Amish and Mennonites are referred to as the plain Pennsylvania Dutch and are most associated with dishes like corn pudding and corn pie.  Baked corn pudding  is generally made with eggs and milk and baked like a custard. Instagram post 2176642998795019822_203001914 Today was International Kindness Day, 🌸and I feel I was in the circle of kindness.  I appeared for the first time on Talk of the Town making the Keto Texas Sheet Cake. Everyone was so nice, and Meryll Rose is a gem. We were supposed to be shooting live (but impeachment hearings prevailed). Hopefully, they will be able to air it before Thanksgiving.  You can watch my segment on their cable channel link in profile. 
On the way to the station I delivered two dozen small cakes to a company for their monthly birthday party. 🍰That was also a first and they were kind enough to give me great feedback. Then we drove across town to deliver a keto birthday cake 🎂(husband surprised wife at an Air B & B vacation.) She loved ❤️it and I was happy to hear back that this was part of making their vacation memorable. 
After the show filming, we  went to the new (way bigger) Trader Joe’s on White Bridge Road to shop for my mom’s upcoming Celebration of Life. When I told the store staff member that I was buying the Italian cookies for that event, she gave me free flowers 🌸🌸in honor of my mom. We walked five miles around town, found a small farmer’s market, ❤️a giant amazing independent bookstore called Book People (where out of nostalgia I purchased a novel set in Naples), and found the perfect breakfast that also made golden lattes and the enchiladas I was craving. Not all avocado toast is created equal and I think Caroline sets the standard! Lots of citrus on that avo.

I didn’t have my heart in it to seek out the best food in Austin, but we managed to eat most delicious, because that’s how Austin rolls. Even the buffet hotel food at the Fairmount was on point. 
I remember the last major death in my life. Hard to move. Almost a strange guilt for still pursuing life with passion. I know I know. It’s called grief, that strange state where one moment you want people around to talk to and one moment you want to be completely alone, wishing you could go back in time for just a day!

Instagram post 2170513050183211081_203001914 My friend Andrea of Nashville Made brought over two cooked chickens from Whole Foods after the passing of my mom. I took off the white meat, froze the dark, and made the darn best ever holiday chicken salad, which we ate for three days. I just happened to have rosemary, apples, pomegranate and celery on hand, and it turned out amazing. This would be so nice on a party table. On the side, serve Hawaiian rolls, crackers and some lettuce leaves. I used my favorite mayonnaise from Best Foods, made with avocado oil (no canola oil). If a friend experiences a death, it is the right and good thing to bring food. It means so much, and if you don’t have time, you can send a delivery. We were very blessed with food from friends. Also, talking not texting is healing. Grieving people need to talk, to share to reminisce as part of the process. Ask if you can call or just show up at the door like my friends did. One friend got the news and threw on old clothes and drove to my door. Feeling grateful, blessed to have the support we have been awarded. Flowers are nice too. Never a waste in my opinion. Even my workout place sent flowers, and it meant so much. Don’t feel awkward….just go and offer help. Weep with those who are weeping. The other side of that is blessing.

Recipe  White meat chicken Pulled from rotisserie chicken * 1/2 cup diced celery
* 1 cup mayonnaise (or to taste)
* 2 tablespoons pomegranate arils
* 1/2 cup pecans chopped (roasted first)
* 1 small gala apple with skin diced (skip if you’re low carb)
* 1 tablespoon parsley chopped
* 1/2 teaspoon sea salt or to taste
* 1/2 teaspoon black pepper to taste or to taste

I had been asked by the Pork Board to write a post giving thanks to someone. I chose Retro Rose. Many of you know she passed away early Wednesday. Many recipes at Spinach Tiger were inspired by her or were her recipes. She was a pork chop lover, and comfort food was her thing. We surprised her and the boys made her a paper crown. (slide). Her friend played the violin and we sang Amazing Grace. This week I’ll continue to post. An excerpt from the post, 
IN ITALY, THEY SAY THE SICILIANS HAVE THE WARMEST HEARTS
“She was often asked to pick up the elderly to drive them to church.  In Italy they say, the Sicilians have the warmest hearts and the hottest tempers. Yes on both counts, although she’s slightly mellowed with age.
She get what she wants at the apartment complex where she lives, because she feeds the maintenance men, who also stop by to vacuum, empty the trash and sometimes help her clean her closets. They know she always has a pot of something on the stove, and it’s not uncommon for her to send dinner home with them for their families. She was the “young” one at her church (at 80) , where the elders called her to help with the seniors. At age 79 she had a job  watching a woman with alzheimer’s and she was still often called upon to “senior sit” those who struggled with dementia.” If you worry about growing old, maybe change your mind about what that means.
