Easy Nutrient Dense Healthy Soup Recipes
I don’t know a single person who doesn’t love soup. I sure do, and I don’t know a soup I don’t love.
I’ve rounded up some of my favorite soups, from super easy like the 30 minute health soup to the more complex, slower cooking borscht.
Many of these were created with nutrition density in mind, getting my calories worth for good health, and lighter feasting days. I’m starting to think with gratitude about all the veggies I’m privy to. If I can get a bunch of carrots to make a soup, I’m blessed.

The 30 Minute Green Health Soup was something I came up with when I was recovering from pneumonia years ago. I had many relapses and wanted to make sure the food I ate was healing. It has chicken broth, broccoli, leeks, potatoes, watercress and lemon and is one of my go to healthy soup recipes.
Roasted Butternut Squash Soup with Toasted Pecans is everything a squash soup needs to be including fried sage leaves.
Borscht is heavy, hearty, and the soup I make as soon as it snows. Beets are a super food, and make an awesome soup.
