It took a lot of science to get the taste and texture that we believe is irresistible. We sell them in two sizes. The large thick chunky cookie and the small two or three bite cookie. The key to scallops is taking off the chill, heating the pan hot before adding oil and butter. Patience as they caramelize in the pan. Once browned, I squeezed a half of a lemon, added a splash of white wine, and garnished with fresh parsley and chili flakes. Here is an EASY side dish that takes ten minutes to make. I call it Camille’s Asparagus. 👩🏻‍🍳This brilliant 16 year old works with me in the bakery and shared her recipe. I’ve made it three times already. 😋I’m in shock at how adept this homeschooler is with cooking and baking. Mom’s let your kids into the kitchen. By the time they are 12, they are cooking for YOU. Most kids LOVE being in the kitchen. I remember when the whole neighborhood was here begging to bake with me as little as age 3, boys and girls. Cooking has no gender. That is a myth. The people I meet that hate cooking usually were never allowed in the kitchen because either mom (or dad) only thought it was their territory and couldn’t deal with the mess. Cooking is chemistry, science, art, craft and skill. It also requires research. It’s educational. It teaches perseverance. Last week I couldn’t get a cookie recipe right and Ryder said, “But you know how to do everything.” I said, “no I don’t, I just keep going until I get it right and then it just looks like I know how to do everything.” The twins have watched that. They know it’s okay to fail and have to throw something out. Then we analyze and start over. There is so much more to the STORY OF FOOD and the Passion of cooking. It’s a task in the house that kids can get their hands on that’s not electronic and has a reward waiting. The giant benefit is ENGAGEMENT. While you’re in the kitchen you get to talk, a rarity in the way we all do life. I know many of you already do this or did this during the lock downs. Peach season brings peach muffins. Made with Almond flour and Swerve, these are naturally keto friendly at 3 net carbs. Twelve of these went to a customer yesterday and then her kitchen had caught on fire. Very sad when I hear things like this. She had ordered $180 of cakes all burned along with her kitchen, bathroom and most sad, her little dog. My heart has broken for her and I will indeed replace all those cakes for her once the insurance company settles them into temporary housing. Friends, check your stove before you leave. I’m not exactly sure how it started, but it still is a call to be aware. I remember one time a lady flagged me down while I was driving in the neighborhood. She had walked her dogs a long way and remembered she left something on the stove. I took her and her dogs back to her house. Things in life can change rapidly (don’t we all know it). Life is not always peaches 🍑and cream. Baking for others and meeting new friends that start as customers is one of the benefits of what I do. This is the best weapon against the darkness we are experiencing now. “For we do not fight against flesh and blood, but powers and principalities.” Prayer brings love, unity, justice and healing. This is week 11 of this daily prayer call. 🙏🏻It started with a plea to God regarding Covid 19; it has evolved as the Holy Spirit leads. Be assured, we pray to a living God, who promises comfort to those who mourn, who knows each person in the womb, who values the very life of EVERYONE, whom he created. Truly, God is our only hope and we cannot navigate this messy world without him. If the Holy Spirit calls you to pray, 🙏🏻please join me. You can come and listen or your can use your voice. Happy Seafood Weekend! _____________________________________ #shrimpscampi #grainfreerecipe #seafoodrecipe #shrimp #shrimprecipe #ketodinner #buzzfeedfood #porkpanko #tastingtable #glutenfreeshrimp #spinachtiger #foodphoto _____________________________________ Ingredients * 1 cup pork panko (breadcrumbs made from pork skins) Can use regular breadcrumbs. * 1/4 cup sliced almonds optional * 3 tablespoons unsalted butter * 2 tablespoons olive oil * 4 cloves garlic grated or minced * 4 tablespoons freshly chopped parsley divided * 1/4 cup white wine optional. * 1 raw pound shrimp peeled deveined * juice of 1/2 lemon * zest of lemon * 1/2 teaspoon crushed red pepper flakes * 1/2 teaspoon sea salt * 1/2 teaspoon black pepper Instructions * Put 1 tablespoon olive oil and 1 tablespoon butter in frying pan. Add 1 clove garlic minced for a minute. * Add pork panko and toast until crunchy. Add zest of lemon. * Add 2 tablespoons parsley to pork panko. Set aside. * In a clean pan, add 1 tablespoon olive oil and 2 tablespoons butter. * Add remaining minced garlic. Sautè for one minute or until golden. * Add lemon juice, optional white wine, black pepper, crushed red pepper. * Cook wine down for two minutes. * Add shrimp. Do not overcook. * Cook for two minutes. Turn over and turn off heat leaving shrimp in pan, remaining to be cooked. * Remove shrimp to a dish. * Top with pork panko, enough to cover all the shrimp. * Sprinkle with another dash crushed red pepper.
