- Cocoa Powder or Nuts (for rolling)

Which Sugar Free Chocolate Chips Make the Best Keto Chocolate Truffles?
I really like the Choc Zero brand, which is why I chose to be an affiliate. The Chocolate melts the best, doesn’t need any added oil or butter added to the ganache. There is no weird aftertaste either.
How to Make Keto Chocolate Truffles
You can heat heavy cream and the chocolate chips together in a bain marie (a stainless steel bowl over a bowl of simmering water. I use Choc Zero Dark chocolate chips. If you use another brand, you might want to add a tablespoon of butter to add extra creaminess.

You must let this cool. It will look like a chocolate sauce and you might be wondering how this is going to solidify. You can refrigerate, but if the ganache gets too cold, it might be hard to form into balls. You can simply let it sit out on counter.
Roll into small balls. Keep them very small, because they are very rich. Your hands will get messy and you may periodically need to wash and dry them. Roll the balls into cocoa powder. Done.
Add Flavor Keto Chocolate Truffles
If you want to add flavoring such as raspberry puree or bourbon, go gently. Add a tablespoon at a time and taste to see if you like it. I am especially fond of the raspberry truffle. I use my recipe for raspberry puree. I add the two tablespoons of puree as soon as the chocolate has melted.
If your ganache has hardened before you have added flavor, you can put it back in bain marie and bring it back to sauce form.

- Roll truffles in unsweetened coconut.
- Roll truffles in chopped pecans, peanuts, pistachios.
- Add orange zest and/or squeeze of orange.
- Add in sugar free raspberry puree.
What is Tempered Chocolate?
Tempered chocolate is an application in heating chocolate so that it will get back its snap. When melting chocolate, the molecules that hold it together change. When you temper the chocolate, the molecules reconnect. If you don’t temper chocolate, it will remain soft when cooled and need to stay in refrigerator.
How to Make Tempered Chocolate
Set up your bain marie. Place only 2/3 of chocolate in bowl over the simmering water. Once fully melted, add the remaining chocolate, and stir very well. Don’t let the chocolate get over 120 degrees F.

- Set up a bain marie (double boiler). I place a stainless steal bowl over a small saucepan of simmering water.
- Add chocolate chips, heavy cream to bowl and stir slowly until all the chocolate chips are melted.
- At this point, you can add flavorings such as vanilla, bourbon, etc.
- Refrigerate until the ganache is set.
- Roll into balls and roll in cocoa powder.
