I started making sourdough bread about ten years ago. I’ve simplified my method and know my basic recipe by heart. I’ve played around with my starter and no matter what I’ve done, it always seem to work out, and even though I used the same recipe

Freezing Sourdough Bread to Create Resistant Starch
Did you know that if you freeze sourdough bread prior to eating, you will lower the glycemic count of the bread. The fermentation (process in sourdough) partially breaks down starches, and is healthier than regular bread.
When baked and frozen, the starches recrystallize forming a resistant starch, which lowers blood sugar spike.
Tips for Freezing Sourdough
- Cool Bread Completely, prior to Slicing
- Slice Bread
- Wrap in plastic
- Reheat by lightly toasting frozen bread
To further aid is lowering blood sugar spike, serve with butter, olive oil, cheese to slow the process.
