Equipment

Ingredients

  • 4 eggs
  • 1/2 cup almond flour
  • 2 tablespoons avocado oil melted
  • 1/3 cup coconut milk
  • 1 teaspoon baking powder
  • dash salt
  • 1/3 cup Swerve or your choice erythritol optional
  • 1 teaspoon vanilla
  • baking spray for waffle maker

Instructions

  • Mix all dry ingredients together.
  • Mix coconut milk with egg oil and vanilla. Leave sweetener out if making savory.
  • Spray waffle maker with baking spray.
  • Pour a scant 1/2 cup waffle batter and cook accordingly. It takes about 5-6 minutes a waffle.
  • Freeze: You can freeze the waffles in a plastic ziplock and bake in 400 degree oven to re-bake for a few minutes. They will crisp back up.
  • Waffles will be a little soft.so them in the air fryer for five minutes or crisp in the oven at 425 F.

Notes

Collagen Powder: If you add a scoop of collagen powder, add one more egg 1/2 cup coconut milk instead of 1/3.
