We love frittatas, quiches, dutch babies, hash with eggs, shakshuka, and eggs benedict. These dishes are all appropriate for an easy supper and can be light on the budget. You can play around with these recipes, using your own leftovers, add to them with more sides or some fruit.

Frittatas can be the main dish or a side dish. I’m bringing you one low carb dutch baby because it’s savory and loaded with cheddar and bacon. Eggplant Benedict can swap out english muffins for the eggplant, but do eat that hollandaise sauce.
