Sugar Free Blueberry Compote is perfect for so many things. Blueberry compote can be a pie filling, a topping for pancakes, ice cream and cheesecake.
You can make blueberry compote with fresh or frozen berries, some lemon juice, water and sweetener. I like to use Swerve (erythritol) and a bit of berry stevia when I have that on hand.
All of this goes into a saucepan and because I’m not putting any typical thickener, I might add a tablespoon of this xanthan gum gel. If you don’t have any xanthan gum, don’t worry about it. But if you plan on doing a lot of keto baking or keto cooking xanthan gum is a great replacement for flour or corn starch for thickening.

Sugar Free Blueberry Compote
Ingredients
- 2 cups blueberries
- 2 tablespoons water or more as needed
- 1 tablespoon lemon juice
- 4 tablespoons Swerve Granulated
- 1 tablespoon Xanthan gum gel optional
Instructions
- Combine all ingredients and cooking on top of stove until thickened, about 15 minutes on low heat. You may need to add 1 or 2 tablespoons of water.
- Allow to cool.
