Christmas dinner ideas usually boil down to two choices for us. Are we doing lasagna or a fancy cut of beef? Should it be prime rib of beef, roast lamb or beef tenderloin?
I just attended an all “beef” cooking class, where we made prime rib with horseradish, very similar to this idea. I couldn’t take great pictures that day because it got dark and everyone was hungry, but the comments went like this. “This is the best meal you ever made.”
I didn’t roast it on that cast iron pan. You will need a real roasting pan, and to make it even more exciting, it was roasted over beef ribs, which were the best ribs I ever ate (as leftovers).

Last year I did this tenderloin roast. You may also know this cut of beef as filet mignon. It couldn’t be easier. It’s less fat than a prime rib, if that matters to you, and it’s a quicker roasting time. I’ve made this so many times at Christmas, it’s become a sort of tradition. You won’t be sorry if you have leftovers either.
