This is one of most favorite chicken thigh recipes ever. The skin is crispy, the chicken is tender and there is lots of flavor. and perfect for a low-carb diet.

I have a lot of chicken thigh recipes here on the blog, but this one was so good, I ate two even though I was full after the first one. Then today, I was sad I didn’t save it for lunch.
Baked with olive oil, garlic and spices at 400 degrees F. for 50 minutes, along with some optional olives and sun-dried tomatoes, dinner was fairly fast and easy.
Do You Prefer Baked Chicken Thighs Over Chicken Breasts?
I would have to answer this question with a profound yes with a caveat. If the chicken breasts are cooked on the bone with the skin, they can come in at a close second. But when baked chicken thighs are done right and skin is crisp, chicken thighs beat chicken breasts.

Baked Chicken Thighs with Garlic
Ingredients
- 4 chicken thighs
- 1/4 cup olive oil
- 10 garlic cloves
- 2 tablespoons Italian Herbs
- 10 green olives
- 2 tablespoons sun-dried tomatoes or grape tomatoes
- salt, pepper
- 1 teaspoon ground red pepper or red chili flakes
Instructions
- Salt chicken thighs and refrigerate for a few hours to overnight, if you have the time. If not, salt and season. Have chicken sit out for an hour, before baking.
- Heat oven to 400 degrees F.
- Arrange chicken in large cast iron pan or baking dish so that chicken pieces are not touching.
- Pour olive oil generously over each chicken thigh. Add more seasoning if needed.
- Bake for 20 minutes, then turn over for 20 minutes. At this point add the garlic cloves. Turn back over for 10 minutes and add in olives and sun dried tomatoes. If you don't have sun-dried tomatoes you could add in some grape or cherry tomatoes. Once the thighs have reached 165 degrees F. and the skin is crispy, chicken is ready to serve.
