Baked Chicken Thighs with Garlic

- 4 chicken thighs
- 1/4 cup olive oil
- 10 garlic cloves
- 2 tablespoons Italian Herbs
- 10 green olives
- 2 tablespoons sun-dried tomatoes or grape tomatoes
- salt, pepper
- 1 teaspoon ground red pepper or red chili flakes
Salt chicken thighs and refrigerate for a few hours to overnight, if you have the time. If not, salt and season. Have chicken sit out for an hour, before baking.
Heat oven to 400 degrees F.
Arrange chicken in large cast iron pan or baking dish so that chicken pieces are not touching.
Pour olive oil generously over each chicken thigh. Add more seasoning if needed.
Bake for 20 minutes, then turn over for 20 minutes. At this point add the garlic cloves. Turn back over for 10 minutes and add in olives and sun dried tomatoes. If you don't have sun-dried tomatoes you could add in some grape or cherry tomatoes. Once the thighs have reached 165 degrees F. and the skin is crispy, chicken is ready to serve.
