Eggplant is one of those weird vegetables that can be blah or amazing. It can conjure up yuck, cringe, or delicious comfort. Well, you’re here for eggplant recipes so you’re looking for good ideas and these recipes will not disappoint.

The first recipe (fried eggplant) is one from childhood, only it’s keto-fied. You can, however, replace what I use for breadcrumbs (pork panko) and you will achieve the same thing. It was such a treat growing up and disappeared fast.

Once you have this fried eggplant down, you can make eggplant parmesan or eggplant lasagna. I added pepperoni to the eggplant parmesan, but you can make it your own.
