We have three ways we make chili in this house, two have beans and one is no beans (for me).
Doug’s Five Hour, Five Bean Chili
Doug can make an awesome pot of chili. He is meticulous in slicing and dicing and it’s the only time I get out of the kitchen. He’s a super taster and he will vary the recipe a little bit each time. You can copy this exactly, or take it as inspiration. He serves it with plenty of sour cream, cheese, chips and chopped onion.
No Bean Chili with Beef and Italian Sausage
When Doug makes chili, he makes a separate no bean pot just for me, because that’s how I like it and I don’t eat too many beans. It’s paleo friendly, keto friendly. The avocado is a must! It’s my big fat healthy bowl of yum!
Our Black Eyed Peas Fast and Easy Chili was discovered by accident when I was asked to come up with some country sausage recipes. I asked for Doug’s help again and this is a winner. We were greatly surprised how much we loved this, especially when it takes about 30 minutes to make!

I cannot remember where I got this recipe. It must have come from Rancho Gordo, but I can’t find it on the website. I’ve made this several times, and I urge you to try it.
Christmas Lima Beans Soup and Celery with Black Olives with Lemon Garnish
I got this recipe years ago from Heidi Swanson at 101 cookbooks. She’s a vegetarian blogger of super fame and an amazing cook. Her recipes always work! I love that you make your own celery salt!

My Famous Bean with Bacon Soup
This is an old recipe (and old picture) but it’s so good, so comforting and has fennel in it.
Doug’s Homemade Guacamole is a great addition. This is so fresh, bright, zingy! Doug makes two things, chili and guacamole and he does them both exceptionally well!
