Best Recipe for Keto Crepes

Why can I say this is the best recipe for keto crepes? I tried five different ways including a recipe from another respected keto blogger. No shade on their great recipes, but I was looking for something just a little easier, as my crepes were falling apart. I started to experiment and discovered my fifth and final keto crepes batch to be THE batch.

Most of the keto crepes recipes from the top keto bloggers taste great and work, but are just a little harder to put together and a little more challenging to make, at least for me. Those recipes usually use cream cheese (a great ingredient for various keto recipes), but I discovered using sour cream instead of cream cheese kept the batter at the desired consistency.

Cream cheese does have a stabilizer like guar gum that helps the crepes stay intact. Thus, I added a little bit of xanthan gum. I looked to traditional French crepe recipes to see what I needed to accomplish. These traditional recipes use eggs, milk, and butter in various ratios, but thin enough to make the very thin crepe.

Ingredients for the Best Keto Crepe Recipe

  • 1/2 cup almond flour
  • 1/2 cup almond milk
  • 1/4 cup sour cream
  • 2 tablespoons melted butter
  • dash salt
  • 1/4 teaspoon xanthan gum
  • Patience (each crepe takes about 4-5 minutes).
  • 1/2 teaspoon vanilla
  • avocado spray for crepe pan
  • 2 tablespoons keto sweetener of choice (monk fruit, erythrtritol) (skip if savory)

Tips for Cooking Keto Crepes

  • Use a crepe pan or non-stick pan.
  • Use a blender to mix.
  • Use a baking spray or oil, but just enough to glisten pan. I wiped off most with paper towel.
  • Heat pan. Use 1/4 cup, but first lift pan off the stove before adding batter and swirl around. then put on medium low heat and have patience. Once the edges are browned, you can lift up and turn over. You only need to cook the other side for about ten seconds or less.
  • You can keep in refrigerator covered for 3-4 days and just reheat to eat.

Ideas for Keto Crepes

  • Serve with whipped cream and berries.
  • Eat with more melted butter and sugar free syrup.
  • Fold in ham and cheese and heat through for a classic French-type crepe.
  • Use for lasagna (recipe coming).
  • Fill with whipped sweetened ricotta.
  • Serve with bacon and sugar free maple syrup. (in this case, cut the bacon into small bite sized pieces before frying).

Equipment

  • 1 crepe pan

Ingredients

  • 1/2 cup almond flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon xanthan gum
  • 4 eggs
  • 1/2 cup almond milk
  • 4 tablespoon sour cream
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla for Sweet Crepes
  • 2 tablespoon keto sweetener (erythritol, monk fruit) for Sweet Crepes

Instructions

  • Mix almond flour, salt, xanthan gum, sweetener together. Set aside.
  • Mix eggs, almond milk, sour cream, vanilla together in bender.
  • Add dry mix. Mix until incorporated.
  • Heat crepe pan (or non-stick pan frying pan) on medium low. Use an avocado spray or use a little oil and rub pan with paper towel so there is no pool of oil.
  • For 8 inch use about 1/4 cup batter. Adjust for larger pan. Take pan off the heat to pour batter on, swirl around and then put pan back on heat.
    Crepe Process
  • This will take about 3 to 5 minutes to cook in order to lift up and turn over without the crepe falling apart. The flipped side only takes about 10 seconds to cook. Remove to plate.
    Keto Crepes
  • Serve as you like. Refrigerate for up to 3 days and reheat to eat.
