Happy Fall Salad 👩🏻‍🍳.More people ask me for my salad recipes than my dessert recipes once they eat them. Why? Balance! That magic combination of fat salt and acid along with varying textures and sometimes tiny bit of sweet. The sweet is NOT sugar. It’s usually a bite of fruit but can come from a syrupy balsamic, honey or a sugar free maple syrup. I probably have 25 different vinaigrettes in my arsenal and it always depends on the season and the ingredients. Take this kale salad for instance. The kale is not that curly hard to eat stuff. It’s lacanato kale, rib removed and chopped to bite size. It’s not massaged as that’s not necessary if you dress it a few hours in advance. Pears and apples add sweet and texture. Cranberries or golden raisins add a different form of sweet and texture but might be left out if you’re avoiding sugar. Nuts are always welcome and I used pumpkin seeds in this recipe. Ingredients
* 2 bunches lacinato kale the long skinny kind aka Tuscan kale
* roasted sweet potatoes
* 1 small apple or pear
* 2 tablespoons toasted pumpkin seeds or nuts of your choice
* 2 tablespoons dried cranberries
* Warmed Cider Vinaigrette
For Roasted Sweet Potatoes
* 2 sweet potatoes peeled, cubed or one large butternut squash, peeled and cubed
* 1 tablespoon maple syrup (Use Choc Zero for Sugar free)
* 1/2 teaspoon cayenne pepper
* dash cinnamon
* dash nutmeg
* 1/4 teaspoon tumeric optional
* 1/2 teaspoon salt
* 1/2 teaspoon black pepper
Warm Cider Vinaigrette
* 6 tablespoons apple cider vinegar
* 1 clove garlic finely chopped
* 1 tablespoon maple syrup or honey
* 1 tablespoon dijon mustard
* 12 tablespoons olive oil
* 1/2 teaspoon sea salt
* 1/2 teaspoon black pepper
Instructions
* Wash and dry kale. 
* Remove ribs from kale. I used a sharp knife to cut out

Scallops can be a mystery to those who haven’t figured out how to get this sear. Cauliflower rice can be a huge bore if one doesn’t know how to take a very bland vegetable and make it sing. 👩🏻‍🍳I combined the cauliflower rice with grass fed butter, cream cheese, lemon zest, salt, pepper and baked in a cast iron pan until it crisped up and served as the perfect bed for these amazing buttery lemony scallops. A low-carb dish no one will roll their eyes on.

SEAR SCALLOPS
* Rinse in cold water to get rid of sand
* Remove side muscle
* Clean the scallops
* Dry the scallops
* Bring to room temperature
* Get HOT pan hot. Add oil AFTER pan is hot.
* Do not crowd (scallops will steam. Cook in two batches if needed.
* Be Patient.
* Fry for two minutes minutes one side, one minute on second side. Scallops will remove easily once caramelized.

Here’s another great EASY shrimp dish Italian style. Spaghetti squash, chopped fresh tomatoes, Trader Joe’s Red Shrimp, herbs, garlic and a little spice. 👩🏻‍🍳❤️💚So good, I actually made this dish twice this week.

Recipe

Spaghetti Squash, cooked, shredded
olive oil
3 garlic cloves (or more)
1 pound shrimp, (I like Trader Joe’s Argentinian Wild), peeled, defrosted
6 tomatoes chopped or 1 small can diced tomatoes
fresh basil, fresh thyme, parsley
lemon zest
red chili flakes
salt, pepper
Pecorino
Kalamata olives (optional)

Sauce garlic in olive oil. Add Tomatoes. Cook a few minutes.
Add spaghetti squash. Add more oil as needed.
Add spices, herbs, salt and pepper.
Cook for twenty minutes for flavors to meld.
Add shrimp, cover for five minutes.
Add olives if you want. Or add lemon zest.
Season again as needed.
Serve with freshly grated pecorino.
Garnish with more herbs.

Have you ever heard of Torta Bianca Caprese? It’s a flourless (almond flour) cake make with butter, white chocolate and lots of lemon. 🍋It has a very unique texture. Eggs are separated and while the yolks are beaten for five minutes until they dare doubled. The whites are whipped and folded in at the end. It’s such a delicious dense lemony texture. I can’t wait to write this one up. It’s the sister cake to Torta Caprese (which is chocolate almond flour cake).

It’s been a while since I’ve had the desire to show restaurant to you. We haven’t dined out much (who has?) but now we’ve decided we have to go out, enjoy life, and support the restaurants. We visited the newly opened The Optimist last night and were so happy to discover a first class restaurant I would give a five star rating to. Between Roasted Flounder and Seared Scallops the dinner was perfection. A shout out for great cocktails and service and you will talk about the dinner rolls for a few days. It’s very rare that I leave a place and want to come back and try every single dish on the menu, but this is one of those places.

It’s time to live again. Servers are wearing masks. Tables are far apart. They are making it work.. We need to get out and support the businesses. We can do this safely!
