I was watching This is Us. Randall was freaking out about his first child soon to be born. A guy in the home improvement store tells him something like, “don’t worry about what you need to know; they teach you who you are.” I feel like that about my blog, 11 years strong, and one of the biggest teachers of my life. I have found my passion and it’s not just cooking. It’s creating. It’s food science and it’s showing others the way by breaking down what seems hard to easy. I am still loving my birthday CB2 White and Black Marble coffee table. If only I had a new rug that fit the space better, but staying in gratitude, not wishitude. Leather chair, sofa and all pottery and pillows from West Elm. Everyone asks about the Cow Picture. It’s one of the few pieces of art that’s not an original. It’s cheap and it’s from Kirkland, but this room needed COLOR and she is what I see when I’m cooking. While I love neutrals for calmness and white is my favorite color followed by soft blue/green, I must have pops of color. Are you a color person or neutral person?

I heard a rumor the weather is going to chill! This beef cabbage soup is just in time and let me tell you, I ate probably six bowls last week. 😋I’m a little crazy 🤪as I ate this for lunch and then dinner, and then lunch again and dinner again. A few days later I was wishing for more soup. The SECRET to this soup is making a tomato broth. 🍅In fact, I could just sit and eat tomato broth with nothing else. I use organic chicken broth with a can of Cento San Marzano tomatoes, 🍅🍅but there’s a bit of a technique to get this right. (not hard, just have to get it right). A good tomato broth will entertain any kind of veggies. This is a Whole 30 compliant recipe, Paleo compliant recipe and a low-carb choice. 2 net carbs per serving, so please don’t complain to me about tomatoes. My suggestion is to have some cooked macaroni around to add in for the family who needs some carbs. There’s always a way to feed a family and serve individual diets. Replace beef with sausage or chicken. It still works, but the beef cabbage soup is a classic. The day I put this on instagram, at least two people made it and sent me pictures, LOVING IT. Recipe
1 pound shrimp, peeled, deveined
4 cups chicken broth (more if you want extra broth)
3 cans BUSH’S® White Chili Beans (do not drain)
1/2 cup tiny peppadew peppers (if you can find them)
1/2 cup small cherry tomatoes or grape tomatoes
parsley for garnish, finely chopped
10 Spanish olives, sliced thinly
lime juice from one lime (save zest for garnish)
sea salt
black pepper
parsley
few red chili flakes if you want extra heat

Place peeled shrimp in a saucepan with cold water. Once water begins to boil, shrimp are done. Remove and drain.
Heat chicken broth up with three cans of beans (do not drain beans). Add beans, shrimp, peppadew peppers, tomatoes, and olives to soup. The peppadews are sweet and spicy. You can substitute with some roast

I am obsessed with the Great British Bake Off, 🎂🍰🧁and can’t wait till tomorrow to make my own birthday cake. 🎂It will be layers of almond wedding cake with homemade raspberry jam and almond raspberry buttercream, topped with fresh raspberries. I made this back in May, but never perfected it enough to blog it. If you don’t know me, I’m not one to fake recipes. If it isn’t absolutely right, 👩🏻‍🍳I’ll hold back until I test it again, because I know my readers trust me, and I value that. Fingers crossed, 🤞🏼I nail this tomorrow. The funny part is, although I use almond flour and almond extract, I’m not getting the almond taste (like wedding cake) that I desire. I think I have an idea to fix this and will let you know.

Crispy skin, very moist chicken inside. This weekend, take some time to roast a chicken. This takes exactly ONE HOUR of passive baking. I did this version with some riced cauliflower. It’s almost tricky, because I added the cauliflower halfway through. The KEY is salting the chicken up to three days in advance. Leave out on counter about two hours, prior to baking. Separate skin from flesh and stuff with herbs like rosemary and sage. Heat oven to 450 degrees F. Use a good chicken. I prefer an air chilled that isn’t full of water, which will roast much more crispy. If you really want to do this like I do, heat a cast iron pan very hot. Place chicken breast side down for thirty minutes. When you turn it over, first add the cauliflower. Some may find that method (from Zuni Cafe) a little daunting. You CAN just roast breast side for the whole hour. I just like that bottom to be really crisp.

Ingredients
* 1 medium Spaghetti Squash
* 1 tablespoon olive oil or butter
* salt and pepper
* Squash Filling
* 2 pieces bacon
* 1/2 onion finely diced
* 2 cups mushrooms
* 1 pound Italian Sausage
* 1/2 cup freshly grated parmesan or pecorino Romano Cheese.
* 1/4 cup heavy cream
* salt
* pepper

Instructions
* Microwave spaghetti squash for 3 to 5 minutes, to make it soft enough to cut it. * Carefully cut in half lengthwise using a towel to hold the squash. * Scoop out seeds. It's important to do that now, as they are harder to separate out once baked. * Brush olive oil or butter over spaghetti squash. * Put into baking dish open squash side down. * Roast for 30 minutes at 400 degrees F. or until it's easy to shred squash into tendrils with a fork. * While squash is roasting, slice bacon across into small lardons. * Fry bacon until you have crispy pieces. Drain on paper towels and set aside. * Keep just enough of th

I just found out it’s national za’atar day. Now some of you may not know what that is…it’s one of my favorite spices, and it’s particularly good on chicken with lemon slices. This recipe was so easy to do. Slice cauliflower and place thighs on top. Sprinkle with za’atar and top with lemon slice. Bake for 40 minutes at 400 degrees.

Does anyone remember Lamb Chops (the puppet)? Back then that was the ONLY lamb chops I liked, but now all grown up, rack of lamb is quick easy go to dinner for us. 👩🏻‍🍳QUICK you say. Rack of Lamb Recipe

olive oil
lemon juice
one lemon thinly sliced
Za’atar spice
salt, pepper
Bring lamb rack down to room temperature (leave out for about an hour from fridge). Season with salt, pepper. Rub olive oil, lemon juice and sprinkle with za’atar.
Place slices of lemon on lamb.
Roast at 400 degrees F. for 20 minutes for medium rare.
