We had much of the day to kill yesterday before our evening flight. We walked five miles around town, found a small farmer’s market, ❤️a giant amazing independent bookstore called Book People (where out of nostalgia I purchased a novel set in Naples), and found the perfect breakfast that also made golden lattes and the enchiladas I was craving. Not all avocado toast is created equal and I think Caroline sets the standard! Lots of citrus on that avo.

I didn’t have my heart in it to seek out the best food in Austin, but we managed to eat most delicious, because that’s how Austin rolls. Even the buffet hotel food at the Fairmount was on point.
I remember the last major death in my life. Hard to move. Almost a strange guilt for still pursuing life with passion. I know I know. It’s called grief, that strange state where one moment you want people around to talk to and one moment you want to be completely alone, wishing you could go back in time for just a day!

My friend Andrea of Nashville Made brought over two cooked chickens from Whole Foods after the passing of my mom. I took off the white meat, froze the dark, and made the darn best ever holiday chicken salad, which we ate for three days. I just happened to have rosemary, apples, pomegranate and celery on hand, and it turned out amazing. This would be so nice on a party table. On the side, serve Hawaiian rolls, crackers and some lettuce leaves. I used my favorite mayonnaise from Best Foods, made with avocado oil (no canola oil). If a friend experiences a death, it is the right and good thing to bring food. It means so much, and if you don’t have time, you can send a delivery. We were very blessed with food from friends. Also, talking not texting is healing. Grieving people need to talk, to share to reminisce as part of the process. Ask if you can call or just show up at the door like my friends did. One friend got the news and threw on old clothes and drove to my door. Feeling grateful, blessed to have the support we have been awarded. Flowers are nice too. Never a waste in my opinion. Even my workout place sent flowers, and it meant so much. Don’t feel awkward….just go and offer help. Weep with those who are weeping. The other side of that is blessing.

Recipe White meat chicken Pulled from rotisserie chicken * 1/2 cup diced celery
* 1 cup mayonnaise (or to taste)
* 2 tablespoons pomegranate arils
* 1/2 cup pecans chopped (roasted first)
* 1 small gala apple with skin diced (skip if you’re low carb)
* 1 tablespoon parsley chopped
* 1/2 teaspoon sea salt or to taste
* 1/2 teaspoon black pepper to taste or to taste
* 1 teaspoon fresh rosemary, finely chopped or more to taste

This post republished from four years ago today, is a must read. The recipe is great, but the tribute is greater. I had been asked by the Pork Board to write a post giving thanks to someone. I chose Retro Rose. Many of you know she passed away early Wednesday. Many recipes at Spinach Tiger were inspired by her or were her recipes. She was a pork chop lover, and comfort food was her thing. We surprised her and the boys made her a paper crown. (slide). Her friend played the violin and we sang Amazing Grace. This week I’ll continue to post. An excerpt from the post,
IN ITALY, THEY SAY THE SICILIANS HAVE THE WARMEST HEARTS
“She was often asked to pick up the elderly to drive them to church. In Italy they say, the Sicilians have the warmest hearts and the hottest tempers. Yes on both counts, although she’s slightly mellowed with age.
She get what she wants at the apartment complex where she lives, because she feeds the maintenance men, who also stop by to vacuum, empty the trash and sometimes help her clean her closets. They know she always has a pot of something on the stove, and it’s not uncommon for her to send dinner home with them for their families. She was the “young” one at her church (at 80) , where the elders called her to help with the seniors. At age 79 she had a job watching a woman with alzheimer’s and she was still often called upon to “senior sit” those who struggled with dementia.” If you worry about growing old, maybe change your mind about what that means. This year will be difficult. My mother passed away a few days ago and I am republishing one of her signature recipes. I was watching This is Us. Randall was freaking out about his first child soon to be born. A guy in the home improvement store tells him something like, “don’t worry about what you need to know; they teach you who you are.” I feel like that about my blog, 11 years strong, and one of the biggest teachers of my life. I have found my passion and it’s not just cooking. It’s creating. It’s food science and it’s showing others the way by breaking down what seems hard to easy. I am still loving my birthday CB2 White and Black Marble coffee table. If only I had a new rug that fit the space better, but staying in gratitude, not wishitude. Leather chair, sofa and all pottery and pillows from West Elm. Everyone asks about the Cow Picture. It’s one of the few pieces of art that’s not an original. It’s cheap and it’s from Kirkland, but this room needed COLOR and she is what I see when I’m cooking. While I love neutrals for calmness and white is my favorite color followed by soft blue/green, I must have pops of color. Are you a color person or neutral person?

I heard a rumor the weather is going to chill! This beef cabbage soup is just in time and let me tell you, I ate probably six bowls last week. 😋I’m a little crazy 🤪as I ate this for lunch and then dinner, and then lunch again and dinner again. A few days later I was wishing for more soup. The SECRET to this soup is making a tomato broth. 🍅In fact, I could just sit and eat tomato broth with nothing else. I use organic chicken broth with a can of Cento San Marzano tomatoes, 🍅🍅but there’s a bit of a technique to get this right. (not hard, just have to get it right). A good tomato broth will entertain any kind of veggies. This is a Whole 30 compliant recipe, Paleo compliant recipe and a low-carb choice. 2 net carbs per serving, so please don’t complain to me about tomatoes. My suggestion is to have some cooked macaroni around to add in for the family who needs some carbs. There’s always a way to feed a family and serve individual diets. Replace beef with sausage or chicken. It still works, but the beef cabbage soup is a classic. The day I put this on instagram, at least two people made it and sent me pictures, LOVING IT. Recipe
1 pound shrimp, peeled, deveined
4 cups chicken broth (more if you want extra broth)
3 cans BUSH’S® White Chili Beans (do not drain)
1/2 cup tiny peppadew peppers (if you can find them)
1/2 cup small cherry tomatoes or grape tomatoes
parsley for garnish, finely chopped
10 Spanish olives, sliced thinly
lime juice from one lime (save zest for garnish)
sea salt
black pepper
parsley
few red chili flakes if you want extra heat

Place peeled shrimp in a saucepan with cold water. Once water begins to boil, shrimp are done. Remove and drain.
Heat chicken broth up with three cans of beans (do not drain beans). Add beans, shrimp, peppadew peppers, tomatoes, and olives to soup. The peppadews are sweet and spicy. You can substitute with some roast
