#ad A few weeks ago I was putting a party together with no time to cook leading up to it. Snap Kitchen was kind enough to send us Keto Friendly Pre-Cooked dinners only requiring heating up. Our favorites were the beef chimichurri, 😋turkey meatloaf😋 (my favorite), salmon, 😋and chicken romesco. 😋Low in carbs, each protein comes with a vegetable and most come with a sauce. Even though I work out of my kitchen and have access to cooking my own meals, I lead a very busy life with a blog, a bakery and baking classes. Having pre-cooked meals to fill in the gaps and feed me healthily is very appreciated.

Make Broccoli Rabe
1. It’s important to trim the stems, submerge in boiling water for about 4-5 minutes.
2. Drain and shock with ice bath to keep vibrant green color.
3. Sautè garlic in olive oil. Add chopped and drained broccoli rabe.
4. Red chili flakes and pecorino cheese are the perfect additions.
5. Serve with Italian Sausage or Pasta (or both).

Every time I sell a box of cakes or teach a keto b

Every time I sell a box of cakes or teach a keto baking class, I’m in awe of how God has put this all in place. I continuously tell people NONE OF THIS WAS PLANNED.
I had NO IDEA OR DESIRE to be where I’m at right now, (running a keto home bakery, teaching keto baking classes and in my 12th year of publishing a food blog. People often ask me where I get my energy. Admittedly I have a genetic predisposition following in my mother, grandmother and great grandmother’s footsteps. I rarely sit down during the day. I hate going to sleep. I can’t wait to wake up in the morning.. But, half of that energy comes from a belief system to live a life of service for others, not to be served, to love others and encourage others, not to seek admiration, and to feel nested in God’s love, steeped in faith to live the life He chooses for me.
In my mind I was going to be a family therapist write books and heal families. I did that for five years. God’s ideas were quite different on how that was going to happen. I find myself healing and helping people in a much different way. You might think that all I do is bake cake, but there’s so much more that goes on behind the scenes with my clients, and what has unravelled since July brings me to tears. Touching lives and giving people hope for their health and mobility so they can go live their own dreams is the world to me.
Let me encourage you today to stop fretting about personal success and allow God to use you for good to be of service to others. I know what striving and measuring myself looks like, and it’s miserable. When I stopped doing that and focused on others and being their solution, life got so much more worth living.

Yesterday’s keto bread class was a joy. Hands on they made dinner rolls, tortillas, and biscuits. These are my people. 😍👩🏻Women inching their way back to health and happiness with good food. Overall, the group lost over 300 pounds on the keto diet. 🥳One woman’s husband was up for a liver transplant due to non-alcoholic fatty liver. He reversed this with the keto diet and NO transplant necessary. 🥳One woman drove 2 1/2 hours to come to my class and has lost 65 pounds. She was excited to find like minds and get support. I was beyond happy to be of help. Right now my mission is to help people ENJOY FOOD without it hurting them and have the kind of energy and mobility I enjoy in my later years.

Every now and again an old blog post goes viral. Over 6300 people went to this old chicken recipe this week! It’s not special or complicated. It’s the chicken my mom used to make. Maybe it was her way of saying hello. ❤️ While I’m not the biggest fan of green bell pepper, it’s divine in this recipe. 😋 It cooks way down with the onions and a bite of chicken, peppers and onion is one great bite. You can do all of this in a SHEET PAN. 👩🏻‍🍳👍 I add it all at once. You might add the wings ten minutes later. I cut the breasts in half! There’s minimal prep time with this caveat. I buy whole chicken and cut it into pieces. It may not look butcher handsome, but it saves a lot of money and means I can splurge on organic air chilled. Add in rosemary, lemon, olives, and use either quartered potatoes or turnips. I have to have a green salad with this. It’s a childhood memory!

There was little time involved in putting this together which is important for me as my new year got off to a bang and my first keto bake class is Saturdayl i’m probably over-preparing, but that’s me. Last year my YEAR of the word was diligence. It paid off. I had no clue I would be opening a home bakery (keto, diabetic friendly) and no idea I would be teaching classes. The blog is still going strong, but these are it’s babies.
