Ingredients
1tablespoonolive oil
2carrotsdiced
fresh or dried herbs such as parsleybasil, thyme
2cans white cannellini beansrinsed and drained
6cupschicken broth
1poundmacaroni
1/4teaspoongarlic powder
1/2teaspoononion powder
Instructions
Dice carrots. Set aside.
Open beans, drain, drizzle with olive oil.
Cook macaroni separately 2 minutes under cooking time. Add diced carrots to the cooking pasta. Drain.
Heat broth to simmer. Add beans and cooked macaroni, carrots.
Add in fresh herbs, onion powder, garlic powder.
Season to taste. Serve with Pecorino Romano or Parmesan Cheese.
Notes
This recipe is more inspiration than something you have to stick to perfectly. Add in cabbage. Add different beans. Add in more carrots or even some potatoes.
