Shallot Vinaigrette
- 1 tablespoon dijon mustard
- 2 tablespoons minced shallots
- 1/4 cup champagne vinegar
- juice of 1/2 lemon
- 1/2 cup extra virgin olive oil more as needed
- sea salt
- pepper
Shallot Vinaigrette
Mix mustard, shallots, lemon juice and vinegar.
Add oil. Shake in jar or use whisk to incorporate.
Make sure you taste and adjust to your liking.
