- 2 red beets roasted or boiled, diced
- 1 mango diced
- Honey lemon vinaigrette
- salt
- pepper
Roast Beets whole in oven at 300 degrees for one hour. Peel, dice. Cool.
Dice Mango.
Toss together with vinaigrette. Use very small amounts.
Season with salt & pepper.
