Sugar Free Blueberry Compote

Ingredients

  • 2 cups blueberries
  • 2 tablespoons water or more as needed
  • 1 tablespoon lemon juice
  • 4 tablespoons Swerve Granulated
  • 1 tablespoon Xanthan gum gel optional

Instructions

  • Combine all ingredients and cooking on top of stove until thickened, about 15 minutes on low heat. You may need to add 1 or 2 tablespoons of water.
  • Allow to cool.
