Cook bacon crispy. Remove and drain.
Chop apples and saute in hot bacon grease. Remove. Drain.
Mix flour, baking powder and sugar in a bowl, then add the egg, milk and apple and crumbled bacon.
Heat a cast iron griddle to medium heat. Rub coconut oil with paper towel. There should not be any extra fat in pan or pancakes won't cook properly or evenly.
Place heaped tablespoonfuls of the batter onto a lightly greased fry pan over medium heat and cook for approximately 2 minutes each side. Turn when you see the pancake bubble.
Serve with maple syrup and yogurt or sour cream.
This made 12 medium sized pancakes, enough for 4 servings.
