- 1/3 cup Sugar Free White Chocolate Chips
- 1 cup Heavy Cream
Prepare a bain marie. (stainless bowl over simmering water). Try to make sure water isn't touching pan, as you want the steam to heat the bowl. Remove bowl from pot and cool, while making the whipped cream.
Add 1/3 of the heavy cream with white chocolate chips to bowl. Stir constantly until the chips are thoroughly melted.
Use a cold bowl and cold cream to make whipped cream.
Whip the heavy cream until the it has high peaks, but not so much that it breaks. If this happens, smooth out with 2 tablespoons more of heavy cream.
When it's time to fold the white chocolate into the heavy cream, stir it well and then gently fold in. Refrigerate before serving by several hours.
