French Onion Soup Recipe
How to Make Authentic French Onion Soup

Instructions
Peel and slice onions.
Melt butter and oil in pan. A cast iron frying pan will caramelize faster than an enameled cast iron.
Keep the heat on low and turn onions every ten minutes for the next 40-50 minutes until the onions are a golden amber color.
Season onions with salt.
Stir in flour until all onions are covered.
Deglaze with wine for about five minutes until alcohol burns off.
Add in beef broth, thyme sprigs, bay leaf.
Add in worcestershire or fish sauce and black pepper.
Add in sherry vinegar to add brightness.
If you can make this part a day in advance and then reheat for boosted flavor.
Make sure you start with hot soup. Preheat broil on low.
Dish out soup among four bowls. Top with toasted baguette and cheese.
Broil on low mode of broil for five minutes.
Top with chopped parsley or thyme.
Notes
Some french baguette are small and I used two slices per bowl, side by side.
