Blueberry Thyme Biscuits with Blueberry Honey

Sweet fluffy Southern blueberry buttermilk biscuits made with thyme from the garden for a delightful combination of sweet and savory.

Ingredients

  • 2 cups blueberries tossed in 1/4 cup flour
  • 2 cups White Lily or soft wheat flour all purpose
  • 6-8 sprigs of thyme
  • 1 tablespoon baking powder
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 6 tablespoons ice cold butter cubed
  • pinch baking soda
  • 3/4 cup buttermilk
  • Honey cultivated on blueberry bushes

Instructions

  • Mix flour, sugar, salt, baking powder together.
  • Mix in herbs (remove from thyme stems).
  • Cut in butter using pastry cutter or your hands.
  • Add in blueberries, gently.
  • Put a pinch of baking soda in buttermilk.
  • Add buttermilk to mixture.
  • Mix until well incorporated.
  • Pat down and cut with biscuit cutter.
  • Put in baking sheet, touching or use a cast iron pan as I did.
  • Bake at 450 degrees for 14 minutes, a little longer if biscuits are extra large.
  • Serve with butter and honey.

Notes

Always make sure your herbs are incorporated into dry flour first before adding in any wet ingredients.
Always allow your biscuits to kiss (touch) before baking. They rise faster.
