In reply to Deb Kunkel. That's might be too large of pan for this recipe. I would use a pan a little smaller, but if that works for you, great. Shouldn't take too long to bake though. You would have to check it at 15 minutes, 20 minutes, etc.

YOU are my hero! I LOVED Texas Sheet Cake growing up and since transitioning to low carb/keto have missed many of my favorite treats. I made these cupcakes yesterday in prep for my post-holiday sugar and carb detox, and I treated my husband and I to one of the cupcakes last night. Yes, one for both of us! Texas Sheet Cake was always a family favorite, though I never knew its provenance. We called it Hot Fudge Cake. But my mother is now diabetic, and we have gone Keto for her health – and ours! I’ve lost 15 pounds, Hubby has lost 25; Mom has lost 50 pounds and is no longer insulin dependent. We are absolutely Keto believers, and keep it pretty simple and clean. Once in a while you NEED a celebratory treat. Mom turns 80 next month, and I’ve been trying out Keto cake recipes for her birthday. This one, finally, is IT. I left the pecans out because Mom isn’t a fan of nuts or coconut. It’s still perfect. I love how glass-shiny the glaze is. So fancy! Thank you for these outstanding cake and frosting recipes.

I have made this before and it was awesome, I used the from scratch version. I am thinking about making it again for me and my husband for our anniversary. My blood sugar/ketones react badly to swerve…could I sub allulose? If so do you have any recommendations for the amount?

In reply to Vicki Enyeart. You can take it down to half cup cocoa powder. That's not really a lot for a chocolate cake. Yes, it's fine to add two tablespoons of almond flour.
