This cake is super delicious but I had to adjust the cook time. I cooked it for 30 minutes at 330 then 10 minutes at 360. I didn’t add as much erithritol the second time I made it cause it was pretty sweet the first time.

In reply to Sami. I'm sorry this happened for you. I have made this so many times to sell in my bakery. I've never had this problem. I'm assuming you followed the directions exactly, so I'm not sure what happened. The reason I start with a frozen pan is almond flour batters tends to brown more and this helps for less browning.

This was a flop for me. I baked it for 45 min and it came out way too moist, so put in for additional 15 minutes and still too moist and raw in middle. I don’t understand the frozen pan as that just adds more baking time. These are expensive ingredients to play with so I won’t try again. I am hoping to salvage this cake into a pudding somehow. Very disappointed.
