I made this for my husband’s birthday and it was SO yummy! My husband doesn’t like nuts in his carrot cake so I replaced them with unsweetened coconut flakes. I didn’t have dairy free sour cream so I used mayo instead. I also used all my dairy free replacements and it turned out great! For the frosting, I doubled the cream cheese instead of the butter (since it holds together better when doing dairy free).
My husband’s favorite cake is carrot cake but I can no longer make him my sugar laden original recipe. This recipe was great for him and didn’t taste like other almond flour cakes. Your combinations in the recipe made it taste like a regular carrot cake. My husband loves it!
