- 4 cups almond flour
- 1/4 cup golden flax
- 1 teaspoon salt
- 1/2 teaspoon chili powder optional
- 1 tablespoon baking powder
- 1 cup cheddar cheese
- 6 tablespoons melted butter
- 1/4 cup buttermilk or milk of choice
- 4 teaspoons corn extract
- 6 egg whites
Spray a baking pan. Preheat oven to 400 degrees F.
Mix together all dry ingredients.
Add melted butter.
Stir in buttermilk (can use almond milk).
Add cheddar cheese.
Add extract and stir in until incorporated.
Whip egg whites until frothy and no liquid is left.
Fold whipped egg whites into batter.
Pour into pan. Smooth with spatula. Reduce oven to 350 degrees F. Bake for 30 to 35 minutes or until internal temperature reads 210 degrees F.
