Ricotta Stuffed Meatballs
Ricotto stuffed meatballs, great for an entree or party dish.
- 1 pound ground beef
- 2 tablespoons parsley chopped finely
- 3 tablespoons grated parmesan cheese or pecorino romano
- 1 egg
- 1 cup ricotta cheese
- 1 teaspoon salt or more
- 1/2 teaspoon black pepper
Mix beef with 1 tablespoons parsley, 2 tablespoons cheese, and egg.
Mix Ricotta cheese with remaining parsley, cheese
Season both meat mixture and cheese mixture with salt and pepper.
Use about a tablespoon of meat mixture, Flatten and place ricotta cheese in middle. Form into meatball.
Continue making small meatballs.
Bake at 375 for 20-25 minutes.
