Low Carb Bolognese Shepherd's Pie with Mashed Cauliflower.

Five Ways to Make Low Carb Cauliflower Crusted Shepherd's Pie, using five different types of meat fillings.

Ingredients

  • 1 head cauliflower
  • 2 tablespoons unsalted butter or olive oil
  • sea salt
  • white pepper
  • 2 tablespoons freshly grated pecorino or parmesan

Instructions

  • Trim and cut cauliflower into pieces.
  • Boil until fork tender. Drain.
  • You will not need to use any other liquid.
  • Mix cauliflower with butter, salt, pepper.
  • Take through a ricer to have a smooth mash.
  • Choose one of the meat fillings above. You will need about six cups for a casserole dish.
  • Put into the casserole dish or a cast iron pan.
  • Top with mashed cauliflower. You can use a pastry bag to make it fancy.
  • Top with cheese.
  • Heat in oven at 400 degrees F. until the top is golden brown.
  • If you want to use the broiler, you must watch it carefully, and use a broiler friendly pan, such as a cast iron.
  • I found it easier to just bake until the top is where I like it.
  • Baking time depends on if you put the ingredients together while they are warm or from the refrigerator.
  • If warm, it only takes about 10 minutes.
  • If place ingredients cold, don't put the cheese on until the last 10 minutes.
  • You will have to bake it for about 30 minutes.
