Shredded Sweet Potato Frittata for One

How to make a frittata for one, low carb, low calorie, using shredded sweet potatoes, arugula for a beautiful Autumn Frittata

  • 3 eggs
  • 1/2 sweet potato
  • Handful arugula
  • 1 teaspoon coconut oil or healthy fat of choice (order here)
  • dash freshly ground nutmeg optional (order here)
  • pinch sea salt
  • dash black pepper

Kitchen Tools


  • Preheat oven to 400 degrees F.
  • Shred sweet potato. Use paper towel to blot moisture.
  • Heat oil in nonstick frying pan. Cook sweet potatoes until cooked through, turning frequently.
  • Add in handful of arugula.
  • Once potatoes are cooked, add eggs.
  • Place in oven for 10-15 minutes or until cooked through.


You can make this for two by doubling ingredients.
