Bacon Wrapped Meatloaf

Ingredients

  • 1/2 onion small dice
  • 2 tablespoons green bell pepper small dice
  • 1 pound ground beef 80/20
  • 1/4 cup almond flour see notes for options
  • 1 tablespoon sugar free ketchup
  • 3/4 cup shredded cheddar cheese
  • 1 tablespoon mustard
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 tablespoon parsley chopped

Glaze

  • 1/4 cup sugar free ketchup or tomato sauce
  • 1 tablespoon sugar free maple syrup

Instructions

  • Sautè onion and fine dice bell pepper in small amount of oil until soft about 5 minutes. Cool.
  • Mix ground beef with onion, bell pepper and remaining ingredients.
  • Form into a free form meat loaf.
  • Wrap meatloaf with bacon crosswise. Tuck bacon under meatloaf so it doesn't curl up.

  • Bake at 350 F. (180 C). for 35 minutes.
  • Brush on glaze.
  • Turn oven up to 400 degrees and bake for another 10 minutes.

  • Mix ketchup and maple syrup together.
