- 1/2 onion small dice
- 2 tablespoons green bell pepper small dice
- 1 pound ground beef 80/20
- 1/4 cup almond flour see notes for options
- 1 tablespoon sugar free ketchup
- 3/4 cup shredded cheddar cheese
- 1 tablespoon mustard
- 1 teaspoon Worcestershire Sauce
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 egg
- 1 teaspoon garlic powder
- 1 tablespoon parsley chopped
Glaze
- 1/4 cup sugar free ketchup or tomato sauce
- 1 tablespoon sugar free maple syrup
Sautè onion and fine dice bell pepper in small amount of oil until soft about 5 minutes. Cool.
Mix ground beef with onion, bell pepper and remaining ingredients.
Form into a free form meat loaf.
Wrap meatloaf with bacon crosswise. Tuck bacon under meatloaf so it doesn't curl up.
Bake at 350 F. (180 C). for 35 minutes.
Brush on glaze.
Turn oven up to 400 degrees and bake for another 10 minutes.
