Shredded Sweet Potato Frittata for One

Ingredients

eggs
1/2
sweet potato
Handful arugula
1
teaspoon
coconut oil
or healthy fat of choice (order here)
dash freshly ground nutmeg
optional (order here)
pinch
sea salt
dash black pepper

Instructions
Preheat oven to 400 degrees F.
Shred sweet potato. Use paper towel to blot moisture.
Heat oil in nonstick frying pan. Cook sweet potatoes until cooked through, turning frequently.
Add in handful of arugula.
Once potatoes are cooked, add eggs.
Place in oven for 10-15 minutes or until cooked through.
Notes
You can make this for two by doubling ingredients.
