Add some avocado oil. Season cod with salt and pepper. Add to hot pan. Cover with lid. Cook approximately 7 minutes. Lid will steam top of fish. Top with Pistachio Parsley Pesto. (recipe below). _____________________________________ Pistacho Parsley Pesto 1/3 cup shelled roasted pistachios juice of 1/2 lemon with zest 1/2 cup olive ol salt, pepper 2 garlic cloves 2 handfuls of fresh parsley 1 tablespoon softened butter. Put all ingredients in vitamin or processor except butter. Pulse until mixed. You can make it smooth or keep it a little chunky. Fold in butter at the end.

I can’t say enough good things about the delicious dinner we picked up at Southall Farms in Franklin on Friday. Dinner for four was enough for six and we were able to entertain another couple without doing any cooking as it was so well received. Last week’s dinner was red chili braised pork, Mexican Rice, tortillas, corn bean succotash (which we were used as a chip dip), a beautiful ensemble of Nashville lettuce, lime creamy dressing, all the condiments one would need and a cake! We sat out on the deck feeling blessed and well fed.
