Finally I had a chance to make a slow food dinner. 👩🏻‍🍳 Cuban Picadillo is by far the best meal we’ve had since this whole “safe in the house” thing. 😋😋Picadillo is a medley of ground beef, Spanish olives, onion, garlic, carrots, capers, tomato, oregano, and Sazon Seasoning, cooked low and slow. I made my own Sazon seasoning which are on the stories today. A real blog post is coming this week. Wait for it. Doesn’t this keto strawberry cake cheer you up?🍓🍓 I can honestly say this might be the best day I’ve had since this whole pandemic thing started. 😍I woke up with the usual heaviness 😞that most of us are experiencing. But after the prayer call all that heaviness was lifted and I felt like I had a Vitamin B12 shot. 🥳Plus a beautiful sunny day after many rainy cloudy days. I was able to move with joy getting all the bakes done for Saturday delivery, make us a salmon lunch, a chicken dinner and put Teddy Bears in the window. In between I even managed to work out 💪🏼and watch last Sunday’s church sermon. I created a new cake recipe that was a sort of flop but I like flops. I learn from them. I’m an enneagram 3 and it’s important for me to accomplish something every day, even flops. I have a wing 2 and it’s important for me to help someone. We are a generous, creative country. Let me encourage you that you have a purpose every day which may have drastically changed in the last week. If you get your focus on others and being part of the solution, you will find new treasures and more peace. Today by God’s good grace and mercy I had enough ingredients to give muffins to nurses, and enough money in the bank to buy dinner for an elderly couple and give them some frozen chicken (that they can’t find anywhere). What little I have, I’ll gladly share, as God is providing. The bakery had an outstanding week of orders, and I thank God, because provision allows me to pay it forward. I’m taking nothing for granted. And, truthfully, I could use a rest. But if God is providing orders so I can be equipped to help others, then I’m on it. I have a second hospital waiting and someone even offered to help pay for ingredients. Each day find someone to love. If you know nurses or hospital workers, use curbside pick up at a local restaurant and drop it on the doorstep. They could use a dinner and that blesses a small business. Oh how I miss the days of hugs and spending time with people. Today I dropped off bakes on the porch with no contact. It’s not the way I’m built. I’m Italian and I hug and I’m chatty. I always find time to get to know you more in person. I’m not complaining because I know these days will come back, just eagerly awaiting. I am still doing my best to eat low-carb and eat some comfort food. This Sausage Crusted Three Cheese Pizza is EASY to make and is now an almost weekly regular. Whole Foods sausage is still plentiful at the store and this is a great way to use a little left over sauce. Ricotta, Mozzarella and Pecorino bring it home. You roll out the sausage as the crust, bake it for twenty minutes, add sauce and toppings and bake another ten minutes or so. Fresh basil if you can find it really makes this. Good tidings everyone. I missed National Meatball Day, which is crazy, because meatballs are my favorite food. 😋My mom, Retro Rose, made the best. 👩🏻‍🍳She used to soak white bread in milk and add a ton of cheese and parsley. They were the best comfort food. I now skip the bread, but I still soak the meat with milk, which tenderizes. I also make sure half of my meat is ground chuck to ensure a tender meatball. She made hers extra big and we would laugh! I keep mine smaller, and they tuck inside my grain free rolls nicely. We served the meatball sliders to the class Saturday as a keto / paleo/ gluten free Italian lunch. One of the other ways I like meatballs is with sauce and ricotta cheese. Over the years, I’ve made many versions of balls. Lamb meatballs with mint pistachio pesto. Veal meatballs. ❤️Chicken meatballs with Quinoa. ❤️Paleo Meatballs. ❤️Traditional meatballs. Yesterday we had our fifth keto baking class this year.👩🏻‍🍳 This time we did CAKE and wow, we had fun! 🥳The biggest treat was the complimentary lunch. We served keto meatball sliders, and let’s just say no one left hungry. I just posted the recipe today at spinach tiger. Easy to find. Several students have now signed up for a THIRD CLASS which was THEIR IDEA. I’m overjoyed with this and they keep saying “it’s such a great time.” They begged for a sausage crusted pizza class and we will do that May 2. We do a deep dive on how to make these recipes work, what ingredients to use, and since its HANDS ON, the students actually learn something they can take home to their families. We have a social time with lively conversation and friendships formed. FOOD IS MEANT TO BE JOYFUL. It should be something to look forward to, something to bond around, something to enhance the culture and enhance physical life and SOCIAL LIFE. I believe in sitting around a table of food for hours and talking, laughing and forming bonds. The sad thing is the food source we are mostly stuck with doesn’t enhance our life and sends mixed messages. It’s 2020. We can take back our power. We can learn to cook basic tasty food and perk it up with herbs and spices. We can make cakes that don’t kill you. We can have an Italian night and still be able to walk. We can learn how to make changes without sacrificing our time and our budget. It’s just some maneuvering to get back to how people ate prior to 1960 with some added technology help. Have you ever braised pork shoulder steaks AKA pork blade steaks? They are a cheaper cut (I spent $7 at Whole Foods), from the shoulder with the blade bone. They are fatty, tasty, and tough. Braising for 9 hours in San Marzano Tomatoes rendered a glorious, flavorful stew with Green Beans and Colorful Peppers. ❤️💚💛🧡If I’m being honest here, I ate three bowls. Completely dairy free as even grated cheese gets in the way. I’m This is one of those nostalgic dishes that reminds me of my family. A year later I take a look and I’m like “wow, I love this.” Why didn’t I then? For this photo, I painted the backdrop myself and created the recipe, but most days I don’t have a grasp of the beauty or value of creating.
