I LOVE anything lemon and this is a fabulous recipe! I had made a non-keto version of a lemon bundt cake for a baby shower and used the Noric Ware mini beehive bundt cakelet pan. I was curious to see if this keto recipe would work in the same pan and it was perfect! I didn’t fill them completely to the top because I thought they might rise a bit more than they did, but I’ll fill a little more the next time. I only baked them for 30 minutes and they were completely done but still moist. I don’t use lemon extract and just increased the amount of zest. I also didn’t use as much butter in the glaze since I wanted the beehive to show through. Other than those small adjustments I didn’t change a thing. Thanks for your recipe!

Wow, this cake is truly unbelievable!

I made the chocolate one first, several weeks ago, and when I got ready to “pour” the batter into the cake pan it was so thick I thought there was no way it was going to turn out. I was actually angry, but baked it anyway. Surprisingly, it came out great and we loved it. I made the lemon recipe, next, that was even better and we were blown away!
