I use whatever citrus we have in the house. A friend grows oranges and whenever she brings them over, I boil and purée some and freeze it so I can make this cake whenever I want to. 					<description><![CDATA[I sought out a recipe just like this because I had some orange olive oil I was looking to use up, and I&#039;m pleased with the results!  I&#039;d heard before about whole-orange cakes, so I was expecting more adult flavors, and this cake indeed has bitterness from the pith, but it&#039;s not bad at all- just go in knowing what to expect!  (One person commented on the bitterness . . . but it didn&#039;t stop him from having another slice a few days later!).  I would recommend that orange be listed by weight, rather than the subjective descriptor &quot;large&quot;- I used 1.5 oranges and had leftover mush, so one probably would&#039;ve been fine.  The crumb was nice and moist- one person commented that it was a bit dense, but it was fine to me (I also used almond meal rather than almond flour, so it&#039;s entirely possible it&#039;d be even lighter and airier with the latter).  And the butter glaze was scrumptious with a lovely, complimentary texture.  Only complaint is that the recipe doesn&#039;t say how much vanilla to put in the cake itself!]]></description>
