I have made stuffing for years with EV Olive oil, enough only to soften onions & celery. Then I transferred the hot vegetables into a big bowl containing the dried bread crumbs. To this I would add chicken broth to my liking & poultry seasoning, salt & pepper to taste. Everyone has always loved it. I would be concerned that the addition of extra oil might give it a more greasy feel/ taste whereas the chicken broth, in my experience added nice flavor. Sorry I don't have amounts, I just go by instinct. If in doubt, use less bc you can always add more. P.S., these are the only ingredients I have ever used in my stuffing. This recipe caught my eye bc of 'Keto' & so I will be trying my stuffing this year with possibly this bread recipe. This is how I found you & your question. Hope this helps.

Marcy,
Anytime you see butter, ask is it for flavor or frying? I would probably use an olive oil for stuffing. That's what my aunt did. She hated butter. You don't need a lot just enough to sauté the vegetables. Coconut oil adds coconut flavor unless you use the refined (my preference). That or avocado oil are great substitutes for frying.

I asked if I could make the grain-free biscuits dairy free using coconut oil. So I am all set to do that, but my intention was to make this great-looking stuffing. I notice this also calls for butter. OK to sub coconut oil again to make this stuffing recipe dairy free?

[…] Grain free stuffing made from grain free biscuits. This was the year I decided to try my hand at grain-free baking. I have several other stuffing and biscuit recipes here at Spinach Tiger, but I didn’t want the grain free (Paleo or Keto) crowd to be left out. As it turns out, the biscuit is always in my top ten and during the holidays, and so was the grain free stuffing. It was worth playing around with because we also ate this way during the holidays and we never gained those usual 5 to 7 pounds. Did you know nuts could do this? […]
