this was amazing – the texture is not too dry and not too gummy which is usually the issue with GF cakes.
I added 1/4 cup of buttermilk to the batter before i folded in the eggs whites. next time i will also increase the sugar just a touch.
the batter is quite thick, dont be alarmed. i cooked at lower temp (300f) for a bit longer to get nice flat tops
