  • 2 tablespoons Irish butter
  • 2 cups stuffing (recipe here)
  • 4 ounces cooked chicken or turkey, chopping
  • 2 cups arugula (or similar greens)
  • Cranberry Sauce (recipe here)
  • 2 -4 Oven fried eggs
  1. Melt butter in frying pan.
  2. Add in stuffing, meat of choice, arugula
  3. Fry until crispy.
  4. Serve with oven fried eggs and cranberry sauce.
