Old School chicken parmesan is old fashioned Italian comfort food. There's a gluten free option and homemade tomato sauce.

  • 8 cups Tomato Sauce (recipe here)
  • 1 pound Chicken Cutlets (recipe here)
  • 1 pound fresh mozzarella cheese
  • 1 pound spaghetti of choice (optional)
  • parmesan cheese for the table
  1. Make sauce according to directions. If you're not having pasta, you will have left over that you can freeze.
  2. Make chicken cutlets according to recipe. Skip lemon.
  3. Preheat oven to 350 degrees F.
  4. In a flat baking pan, layer, sauce, chicken, more sauce, cheese, enough to cover. Make chicken parmesan in one layer.
  5. Bake for 20 minutes or until the cheese is soft and melted.
  6. Serve with pasta or as is.
