Ingredients
  • 8 tablespoons unsalted butter plus more for pans
  • 1 cup all purpose flour
  • ½ teaspoon baking powder
  • 3 large eggs
  • ⅔ cups granulated sugar
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1½ teaspoons freshly grated lemon zest
Instructions
  1. Preheat oven to 350 degrees F.
  2. Coat madeleine pans with butter or baking spray. I used non-stick pan and baking spray.
  3. Melt butter and allow to cool to room temperature.
  4. Beat eggs and sugar together until light and fluffy, 3-5 minutes.
  5. Add vanilla and lemon zest and beat for another minute.
  6. Fill molds with batter until almost full. Use teaspoon or 1½ diameter scoop.
  7. Batter will be thick, so distribute evenly.
  8. Bake for 10-12 minutes.
  9. Cool for a few minutes and then invert and remove.
  10. These are great served warm, but can be served at room temperature.
  11. Cover with a cloth if serving that day.
  12. You can also freeze.
