Turkey Drum Sticks roasted with Italian flavors

Ingredients
  • 3 Turkey legs
  • salt
  • 6 tablespoons of freshly chopped herbs (sage, parsley, rosemary, thyme)
  • 1 tablespoon olive oil
  • 2 teaspoons mustard
  • 2 garlic cloves, diced
Instructions
  1. Salt turkey legs and refrigerate anywhere from one to three days.
  2. Remove, rinse salt off. Pat dry.
  3. Combine herbs, mustard, olive oil, garlic.
  4. Using a knife, loosen the skin around the legs and stuff the herbs inside.
  5. Refrigerate for a few hours.
  6. Take out and allow to sit for 60 minutes before roasting.
  7. Roast at 350 45 minutes per side, until an internal temperature of 180 is reached.
Notes
If you have time, dry brine the turkey legs, by salting them for up to three days, covered loosely in refrigerator.
